I cook for people following a lot of different diets but this week was a first for me. I needed to cook low (or no) carb meals. One of the things that seems to be lacking in this diet is a way to make sandwiches and for a lot of folks, sandwiches are a mainstay. Recently, I heard about a "no carb" bread or perhaps a bread substitute. Cloud Bread is a dream come true for followers of this type diet. They are a lot like meringues..those nice fluffy yet crispy cookies that Elizabeth and I made at Christmastime. Basically, the only difference I can see, is that Cloud Bread is placed in a zip type baggie and allowed to become soft. The taste test proved promising.
The whole deal of making a no carb bread has me thinking of how I can alter the main recipe to become something totally different and yet keep to the diet. Perhaps some herbs or spices might add a bit of pizzazz to the "bread". This will be something to play with once I get back to the Bayou. My son and daughter-in-law did make a good observation. Cloud Bread is also gluten free! For anyone interested in making this easy bread substitute, recipes abound and are quite simple. You should try it!
