Too Many Greens!

What do you do when the garden decides to overproduce?  You give.  You give until the neighbors literally "hide" from you when they see you loaded down with cauliflower, mustard greens, cabbages, chard, beets, spinach.  They literally hide if you knock on their door and leaving baskets of veggies without asking seems a bit presumptuous.  This has gotten to the point that it is like that proverbial zucchini predicament.  No one wants vegetables!  So...what do you do?  You find a way to disguise veggies in everything you eat!  I hate to see things go to waste.

After once again pawning off as many greens as I could, the mustard greens still needed picking.  I was mixing up a batch of yeast dough when I had the brilliant idea to make some cheese filled buns.  Son had the brilliant idea of adding chopped mustard greens to the batch.  Thinking of spinach dip and the pull-apart breads, I figured I may as well give it a try.  The rolls were made "cinnamon roll" style with basically a spinach (or, in this case, mustard greens) dip filling.  I am happy to say that they turned out delightful!

So, when that overload of veggies hits you, my advice is to be inventive.  You never know what might turn into a tasty treat!  Now to figure out something to do with an excess of cauliflower!
