Butterscotch Bars!


One of my favorite things to do on a cold, wintry day is bake! I hear no complaints about this as my husband, son and two brothers love to eat these goodies! Today's creation was Butterscotch Bars! This is a very simple yet delicious snack to bake and is sure to gather many raves from all who are lucky enough to be on the receiving end of a plateful. As an added bonus..the whole house smells wonderful! Just the thing for the holidays!

Butterscotch Bars

2 1/2 cups all-purpose flour
1 cup butter
3/4 cup light brown sugar (packed)
2 eggs
1 cup nuts (chopped)
1 can sweetened condensed milk (14oz)
2 cups butterscotch morsels

Preheat oven to 375 degrees and grease a 13x9 inch bake pan. In mixing bowl, stir together flour and brown sugar. Chop in butter and mix well until coarse. Add both eggs and blend well. Stir in nuts. (This will make a very coarse mixture that resembles oatmeal.) Scoop out two cups and set aside. Press the remaining crumbles into the pan and bake for approximately 15 minutes. While crust is baking, pour the sweetened condensed milk and butterscotch morsels into a heavy saucepan. Over *low* heat melt the morsels stirring constantly to blend with the milk. Pour this over the prepared crust. Top with the reserved two cups of crumb mixture. Bake for an additional 25 minutes or until bubbly. Cool slightly..cut into bars..and serve. Just a note..if you let these cool completely in the pan, they become extremely difficult to remove!
